For travel, I opt for comfort and a monochromatic palette. I like to layer and have a scarf at the ready. It keeps me cozy during the flight since it always seems chilly, no matter the season. As I mentioned here, I like to travel light and efficiently. For a weekend trip I pack a carry-on suitcase and large bag to tote around my toiletries, book, purse, and iPad mini. Christmas is less than a week away! It’s always a busy time of the year, so I hope you are able to take the time to relax and enjoy the Christmas Season. Each year my husband and I pick out a few new eclectic ornaments for our tree. It’s a fun tradition that we have started together. What are some of your favorite Christmas traditions? With all of the delicious holiday candies and baked goods at our fingertips, a break from such caloric foods is always refreshing. Here is an easy vegetable dish to enjoy. I like adding a fried egg for protein and the yolk adds a nice flavor to the couscous.
4 brussels sprouts
6 baby carrots
1 small sweet onion
1/4 red pepper
1/4 green pepper
6 baby bok choy leaves
4-6 baby broccoli
3 tbsp extra virgin olive oil
1 1/2 tbsp freshly ground pepper
1 1/2 tbsp Trader Joe’s South African Smoke
2-3 eggs
1 cup couscous
Step 1:
Preheat oven to 350°. Prep all vegetables.
Step 2:
Add spices and EVOO, mix well in an iron skillet.
Step 3:
Roast in oven for 30 minutes, stir once.
Step 4:
Prepare couscous 10-15 minutes before vegetables are finished.
Step 5:
Fry egg. Plate vegetables over couscous and top with fried egg.

I hope everyone had a great weekend! Chicago was hit with another snowstorm on Saturday, beginning in the wee hours of the morning and lasting until early evening. Somehow, I managed to be out and about the entire weekend, even in the frigid 15° temperatures on Sunday picking up a few more Christmas gifts. Layers over layers are my go-to as of late. I’ve recently discovered the textile and clothing designer, Kieley Kimmel. Her clothes are a masterfully balanced juxtaposition of animated prints and sophisticated lines. I’ve never been too excited about wearing hats. When I was little, I remember avoiding it as much as possible when it was time to go outside in the cold. However, now it’s one of my must-have winter accessories. Mostly out of function, rather than fashion.
